Getting through the week can be tough sometimes with all the driving we do for school, the cooking, cleaning, giving the kids all attention & just trying to keep up soooo… I have been trying to prepare as much food for the week as possible so I am not in the kitchen ALL week long… Our most popular side dishes/lunches seem to be cucumber salad, balsamic pasta salad and lentil salad 🙂
I will be back with the other recipes soon but for now here is our lentil salad recipe…
About 18 ounces cooked lentils, 1 orange pepper , 1 cucumber, 1/2 red onion, 1 large tomato, juice of 7 lemons, a few tablespoons of olive oil & a bit of kosher salt & pepper to taste. Chop everything and mix and of course enjoy!
During these cold months we have been coming home from school and enjoying hot chocolate and a snack (pretty much daily…yum). The other day we were out of good after school snack so I whipped up something I used to have as kid….hot buttered O’s and WOW the kids went crazy for them 🙂 I didn’t have a recipe but basically I just put 1/2 stick of butter, 1/2 cup of peanut butter, some brown sugar, and a few cups of Trader Joes O’s. I melted everything together and then added in the cereal…simple & wonderful!
