We love making a huge pot of veggie soup…it is dinner a few nights and we often add whole wheat pasta or brown rice to it for the kids. I will try my best but since I never measure feel free to change to your liking and keep in mind this makes a HUGE pot of soup!
Ingredient List: 2lbs carrots (sliced), 2 celery stalks (sliced), 2 large yellow onions (chopped), 1 head cabbage (shredded), 1 package mushrooms (sliced), 1 zucchini (cubed), 1lb green beans (small pieces), lot of garlic chopped (about 2 heads), 4 boxes broth (we use 2 veg & 2 chicken), 2 small cans tomato paste, basil, a few cubes of broth, olive oil, oregano, salt & pepper. (Instructions below)
I always have someone working with me in the kitchen (usually Ella) but this time Finn wanted to give the peeler a try 🙂
Start by sautéing the carrots, onion & garlic in a bit of olive oil until carrots are slightly tender….
Next add in all broth, basil (about 15 leaves), a bit of oregano, salt & pepper, cabbage, green beans & celery. Bring to a boil reduce heat & simmer until veggies are almost done.
Finally add in the mushrooms & zucchini and cook for another 10-15 minutes. Enjoy!
