in the kitchen : yummy pasta

A friend gave me this recipe a few weeks ago and I decided I needed to share since we have made it more times than I can count since then…lol! EVERYONE in the house LOVES it 🙂

Preheat oven to 450. In a baking dish, toss together pint halved cherry tomatoes, chopped garlic, 1/4 cup olive oil, salt & pepper. Roast for 15 minutes. Sprinkle with 1/2 cup bread crumbs and roast an additional 5-10 minutes…set aside. Boil 1lb linguine. Heat a large saute pan over med heat. Add 2 TBsp oil, 2TBsp butter and 1 tsp chopped garlic and cook for 1 minute. Add 1/2 cup vegatable broth and cook for 1-2 minutes. Add the drained pasta, roasted tomatoes and 2-4 cups spinach. Toss well and serve with fresh bread 🙂
